Note that some of the delistings are because of multiplayer server shutdowns so even if you can install and launch the game, it may not actually work anymore. Delist just means that Xbox can no longer sell the game as they don't have the license. As long as the discs aren't broken, they will work perfectly fine.
I do have it on disc, but that’s the problem. The disc just has the release version burned on to it, they all do. I need the update file. If I can put that on a usb, I can edit directory names/ executables/ etc in such a way that the Xbox will just use it as an update.
